Cashews do not spoil the way milk does. They fade: the crunch softens, the sweetness dulls, and eventually the oils turn and leave a bitter, paint-like taste. All of it is preventable with three simple rules.

Two practical notes. First, cashews absorb smells, so keep the container away from strong spices, pickles and onions, especially in the fridge. Second, when taking a chilled container out, let it come to room temperature before opening; otherwise moisture condenses straight onto the kernels.

Monsoon Storage, the Kerala Question

From June to September, room-temperature storage gets risky anywhere on the coast. During the monsoon, move opened packs to the refrigerator by default, and never store cashews in a container that was washed and not fully dried. One damp lid can cost you a whole batch.

Unopened Packs

A sealed pack is its own protection. Our pouches keep drum-roasted kernels crisp for months unopened; store them like you would the open jar, cool and dark, and they will be exactly as roasted when you open them. Roasted kernels, by the way, keep better than raw ones: drum roasting drives out the last of the moisture. That is one more quiet advantage of the traditional method.

How to Spot a Cashew Past Its Best

If in doubt, throw it out; rancid oils are not worth eating. Better yet, buy in the size you will finish within a month or two. It is exactly why we pack in 100g, 250g and 500g rather than only bulk tins.

Trust your nose and your bite: stale cashews smell sharp like old oil or paint, bend instead of snapping, and show deep yellowing or dark oil spots. If in doubt, throw them out.
