Every roasted cashew you have ever eaten was made one of two ways: dry roasted in a rotating drum, or fried in oil. The label rarely tells you which. Your tongue always does.

What Drum Roasting Is

Drum roasting is dry roasting: kernels tumble inside a slowly rotating heated drum, cooking evenly in their own natural oils. Nothing is added. The tumbling keeps every kernel moving so no side scorches, and the slower heat penetrates to the centre of the nut rather than searing the surface.

This is the traditional method of Kollam, the cashew capital of the world, refined over generations. It takes longer and demands more skill, because there is no oil bath to even out mistakes. The roaster has to judge the batch.

What Oil Roasting Is

Oil roasting is frying. Kernels go into hot oil, cook fast, and come out uniformly golden. It is quicker, cheaper at scale, and very forgiving, which is why most mass-market brands use it. But the oil does more than cook:

How to Tell What You Are Eating

Rub a kernel between two fingers. An oil-roasted nut leaves a slick; a drum-roasted one leaves almost nothing. Bite one: drum-roasted cashews break with a dry snap and taste faintly sweet at the finish. And check the ingredient list: a drum-roasted plain cashew pack should read like ours does, cashews and nothing else.
